Why shawarma works for groups

Finishing the order

Baklava makes a sweet ending for a catered meal. Label dishes clearly, especially pita and anything that contains sesame, so guests can make informed choices. During service, keep hot food at 140 degrees Fahrenheit or above and cold items at 40 degrees or below. Refresh serving trays before they run low, and plan for the time food will sit out during a long event. Plan for serving utensils, containers, and napkins too, so the line moves smoothly.
