Plan for arrivals to spread out across the first hour, and give the truck a clear service window rather than a single start moment. A window that runs from a stated start time to a stated end time gives everyone room to eat without a crowd forming at the wrong time.

Set the service window with the truck

Share the official start and end times with the truck well ahead of the event, and confirm them the week before. Ask how long the truck needs to be fully set up before the first guest arrives.
